Sukuma wiki or Collard Greens is a very rustic African dish. It is a Swahili phrase meaning, “to stretch the week” especially when paired with Ugali (cornmeal fufu).
So many people speak of kales or sukuma wiki as THE super greens and the foodie world is smitten with kale; it’s now featured in everything from main dish to snacks. What the world doesn’t talk much about is Collard Greens which is equally nutricious and delicious- When preparing the greens, the leaf and two thirds of the stem can be used if desired in order to consume a majority of the nutrients that are contained in the stem.
While collard greens have traditionally been used for heartier cooked dishes, these nutritious greens have made their way into health food diets: shredded raw in salads, steamed, and even used as gluten-free wraps.
